Homemade Vegetable Broth – Cheap, Easy, and Healthy!

No scrap should be left behind is my motto! I am a huge advocate of using everything, not wasting, and being sustainable. The best way to squeeze out all the use of your vegetables is to make your own Homemade Vegetable Broth!

Freeze Your Scraps!

I keep all my vegetable scraps as I cook whether it is the tops of bell peppers, skins of onions, or root ends of vegetables. I simply keep them in the freezer in an airtight container until I am ready to make some Vegetable Broth. I love use the Half Gallon Stasher bag!

Uses for Homemade Vegetable Broth 

I don’t only use Vegetable Broth to make sauces, soups, or stews. I also use it as a great alternative to using oil when I saute or cook on my stove top. It’s a great alternative if you are trying to minimize your oil consumption.

Storing Your Homemade Vegetable Broth

If you don’t have any use for your Homemade Vegetable Broth at the time, then store it for later. I like to pour the broth into a silicon ice cube traying because it is about 1 Tablespoon. Then I will place the cubes into an airtight container and have them ready to use when I need it.

Disposing Your Used Vegetables

It’s really tempting to just throw your used veggies in the trash, but I would recommend you get them to the compost! Since they’ve been boiled, they’ll decompose really easily. If you don’t have your own compost, I’m sure you can find a community compost or somewhere that will take your scraps!

Homemade Vegetable Broth

Are you sick of wasting your vegetable scraps? Well don’t be, cause now you can use them to make your own healthy, low-sodium, vegan, easy homemade vegetable broth! It’s seriously so simple, I don’t know why I wasn’t doing it sooner!

Ingredients

  • ½ gallon Frozen Vegetable Scraps
  • 5 cup Water
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions

  • Bring water to a boil, then add Vegetable Scraps with Salt and Pepper.
  • Bring to a boil again.
  • Lower the heat to a simmer, then simmer for 1 hour.
  • Strain the scraps with a strainer and store in an airtight container. I recommend using mason jars. You can also pour the broth into an ice cube tray to freeze for later.
  • Enjoy!
