Jook Savory Oats – Great Salty and Savory Breakfast

Oatmeal is a great staple for breakfast, but we all desperately need a good savory twist for those mornings we want something salty and hearty. I decided to take one of my favorite childhood dishes called Jook (or Congree) and turn it into the perfect bowl of savory oats!

WHAT IS JOOK (CONGEE)?

This was a classic Chinese staple throughout my childhood. It was simple, but delicious and comforting. It is traditionally made with a chicken broth, rice, garlic, and ginger. Then it is topped with soy sauce, green onions, cilantro, crushed peanuts, or sesame oil.

My dad used to make a big pot of jook after Thanksgiving by slowly cooking the turkey bones in the broth. Then we would eat it for breakfast, lunch, and dinner. Jook can be enjoyed any time of the day, but I always loved enjoying it at Dim Sum (Chinese brunch) or at night. It is perfect for settling any tummy.

SAVORY OATS

I know most people are skeptical about trying savory oats, in fact, I was skeptical myself. But let me tell you, it has been the best addition to my favorite go-to breakfast recipes. It is easy to make and fulfills my salty morning cravings.

There are minimal ingredients involved here and can be altered for your personal preference. Not to mention, this is 100% plant-based, vegan, gluten-free, and absolutely stunning.


TIPS & TRICKS

  • If you like a more “mushy” bowl of oatmeal, then use Quick Oats over Rolled Oats.
  • Use the Trader Joe’s Vegan Chicken Seasoning with Vegetable Broth if you don’t have the Vegan Chicken Seasoned concentrated broth to use.
  • When you cook your oatmeal, don’t overcook it until there’s no more liquid because it will thicken over time.

THE MORE YOU KNOW

Vegan Chicken Broth

This is a concentrated paste that just needs you to add water and mix. I love to buy this Vegan Chicken Broth from Amazon and it can make up to 30 cups of Vegan Chicken Broth. It makes a big difference and is great to use with so many different recipes. If you aren’t able to get your hands on the broth you can also add Trader Joe’s Vegan Chicken seasoning to some vegetable broth as well.

Rolled vs. Quick Oats

Rolled or Quick Oats can be used for the recipe. Quick oats are more processed than Rolled oats because they are broken down further. I prefer a more “mushy” oatmeal, so I like to use Quick oats for my oatmeal. Rolled oats are less processed, therefore, more preferred by many.

Coco Aminos

This is a soy sauce substitute. Here is my favorite brand to use for Coco Aminos on Amazon. I like to use coco aminos over soy sauce because it is lower in sodium and has a more sweet soy flavor. It is very similar to a teriyaki flavor in comparison to soy sauce. If you want to learn more about soy sauce alternatives you can check out my blog post here.

Savory Jook Oats

I was skeptical at first on the idea of savory oats, but this recipe has turned into one of my go-to breakfast recipes! It’s salty and satisfies all my savory breakfast cravings. It was inspired by one of my favorite Chinese meals. It’s vegan and gluten-free. Enjoy!

Ingredients

  • ½ cup Oats rolled or quick oats
  • 1 ¼ cup Vegan Chicken Broth
  • 1 ¼ cup Vegetable Broth if not using Vegan Chicken Broth
  • ½ tsp Trader Joe's Vegan Chicken Seasoning if not using Vegan Chicken Broth
  • ½ – 1 inch Ginger sliced
  • ½ – 1 clove Garlic sliced
  • 1 -2 tbsp Cilantro
  • ½ – 1 tbsp Coco Aminos may use soy sauce or liquid aminos
  • ¼ cup Spinach optional to mix in after
  • 1 -2 tbsp Green Onion chopped

Instructions

  • Prepare Garlic, Ginger, and Cilantro as directed.
  • In a small pot over high heat, bring Broth, sliced Ginger, sliced Garlic, and Cilantro to a boil.
  • Once boiling, lower to medium-low heat to simmer, then add in Oats. Stir until Oats begin to thicken.
  • Remove pot from heat, transfer to a bowl and add in some Coco Aminos, optional Spinach, and Green Onion. ENJOY!
