Homemade Vegan Sushi – Made Easy With Chickpea Tuna!

Love sushi but want to live a plant-based vegan lifestyle? Say no more! This homemade vegan sushi is easy, simple, and very delicious!

Sushi was my favorite food growing up and it was one of the last things that I gave up to fully commit to my plant-based journey. It was hard at first, but it also drove me to develop this homemade option!

Chickpea Tuna has been my favorite go to meal whether it’s to make a sandwich, wrap, or sushi. I even will just grab some veggie sticks or crackers and start dipping. This recipe checks off all the boxes of being perfect for plant-based, vegan, gluten-free, keto, paleo, you name it!

Sushi Cravings Satisfied

This recipe provides all the sushi cravings… minus the raw fish. What really helps to elevate the Chickpea Tuna Sushi is the addition of capers. They are perfect in adding the salty finish that is typical in a lot of sushi rolls.

Make it Your Own

The beauty of my homemade vegan sushi is that you can add whatever your heart desires! Some of my favorite ingredients to add into my sushi are carrots, cucumbers, avocado, rice, lettuce, red bell pepper, cilantro, green onion, microgreens, alfalfa, the list goes on.

Into Sushi Burritos?

Sometimes it is just easier to make a big Sushi Burrito to enjoy. All you have to do is make your usual sushi and cut it in half. It is the perfect on the go meal that you can hold in your hand and eat as you’re walking or driving.

TIPS & TRICKS

  • Leave the chickpeas a little chunky to get more texture
  • Finely chop up the green onion, dill, and capers for a better consistency
  • Get creative and throw in some veggies or other goodies!

THE MORE YOU KNOW

Vegan Mayo

There are a variety of different brands out there, but my favorite Vegan Mayo is by Veganaise. If you don’t have any Vegan Mayo on hand you can easily substitute Tahini or Hummus.

Chickpea Tuna For Homemade Vegan Sushi

Ingredients

  • 1 can Chickpeas 13.5oz
  • 1 tbsp Vegan Mayo can sub hummus or tahini
  • 2 tbsp Capers minced
  • 2 tbsp Dill minced
  • 1 tbsp Green Onion minced
  • 2 tbsp Dijon Mustard
  • 1 tbsp Lemon Juice

Instructions

  • First, rinse and drain your chickpeas. Make sure chickpeas are decently dry.
  • In a medium bowl, mash Chickpeas with a fork (I recommend keeping it a little chunky for more texture)
  • Finally mince Green Onions, Dill, and Capers.
  • Add all the ingredients to the mashed Chickpeas, then mix until ingredients are evenly distributed.
  • You can now use the Chickpea Tuna as a dip, in a sandwich, or in sushi.
  • Enjoy!
