Easy Minestrone Soup – Will Warm You Up Inside Out

A Classic Winter Soup

Minestrone soup is usually underappreciated in comparison to the classic chicken noodle soup when you are in search of a soup that is light and healing. It is, however, the perfect solution if you are in need of some cozy vibes, warmth, and relaxation. This is why I created my Easy Minestrone Soup!

Simplicity At It’s Finest

All my Easy Minestrone Soup requires are some vegetables, vegetable broth, a few different seasonings, and a nice pot to let all the magic simmer together. It is the perfect meal that can be prepared ahead of time or made at the last minute.

Resilient and Versatile

Minestrone is the perfect soup that can incorporate any vegetables you have laying around. You can add your favorite vegetables, or you can remove the ones you find unpleasant. The true secret to making Minestrone is to taste as you go. It is always easier to add more vegetables or seasoning as you’re cooking.

TIPS & TRICKS

  • Prep your chopped vegetables ahead of time, then you can easily throw everything into the pot and let it cook!
  • Taste as you start to add seasoning to cater it more to your preference.

Vegetable Broth

Any vegetable broth works, but I find that a seasoned broth works best! My favorite is Better Than Bouillon’s Seasoned Vegetable Base. Easy Minestrone Soup

This minestrone soup recipe is super easy, healthy, quick, simple, and vegan! It is the perfect soup for a winter day to cozy up with in front of the TV.

Ingredients

  • 1 Sweet Yellow Onion diced
  • 3 Celery Ribs sliced
  • 2 Carrots coined
  • 1 Large Russet Potato peeled and diced
  • 1 can Fire Roasted Tomatoes 14.5oz
  • 3 Garlic Cloves Minced
  • 1 cup Kale shredded
  • 7 cup Vegetable Broth
  • 1 tbsp White Wine Vinegar
  • 1 tbsp Tomato Paste
  • 2 tsp Olive Oil
  • 1 cup Dry Pasta
  • 1 tsp Dry Rosemary
  • 1 Bay Leaf
  • 1 tsp Red Pepper Flakes
  • 1 tsp Oregano
  • 2 tsp Basil
  • Salt and Pepper to Taste

Instructions

  • Prepare all vegetables.
  • Sauté the onion, carrot, and celery in the olive oil until the onion is golden brown.
  • Add in the garlic, potato, tomato paste, rosemary, bay leaf, red pepper flakes, oregano, and basil. Cook for 3 more minutes.
  • Add in the fire roasted tomatoes and mix thoroughly. Bring to a boil.
  • Add in the vegetable broth. Bring to a boil and then simmer.
  • Add the pasta and cook until tender, about 15 minutes.
  • Add the vinegar. Add the salt and pepper to taste.
  • Remove from heat and fold in the kale.
  • Enjoy!
