Vegan Carrot Cake Whoopie Pies – A Great Treat

In preparation for Spring, I took the classic Carrot Cake and made them even more fun as Vegan Whoopie Pies! These little pies are vegan, gluten-free, and fun to make for any dinner, pot-luck, or outing you may have to help celebrate the spring season.

Not your average Carrot Cake

Growing up, Whoopie Pies were such a treat because my parents didn’t really buy them ever for me. BUT, in their defense they fed me more than enough ice cream, so my lack of Whoopie Pies can be forgiven.

Therefore, I decided to combine two of my favorites… Whoopie Pies and Carrot Cake. That’s how the best recipes come about is by smashing together two delicious ideas!

Completely Flourless

Did I mention these cookies are completely flourless? That is right, they are made using oats as the base ingredient! I’ve replaced flour with Bakery On Main Rolled Oats.

Oats to Oat Flour

If you have ever come across a recipe that calls for oat flour, don’t panic and don’t go out and buy some overpriced oat flour. It’s very simple to make and any blender can do the job. Just simply blend up any oats you have on hand!

TIPS AND TRICKS

  • The batter can be a little thin so make sure to form a cookie shape before baking.
  • Flatten cookies so it is easier to create whoopie pies that stand instead of tip over.
  • Feel free to shred your own carrots or buy pre-shredded carrots to make the process go quicker!
  • Silicone baking mats will help the cookies not stick, but feel free to use your preferred method!

THE MORE YOU KNOW

Oat Flour

Oat flour only requires blending up oats to create a flour like product. Absolutely any blender can do the job. If you want, you may sift the oat flour after blending to remove larger pieces of oats.

Vegan Cream Cheese

I recommend using a thicker vegan cream cheese so that the filling is a bit denser. I like to use the Tofutti Cream Cheese!

Carrot Cake Whoopie Pies

Who knew eating healthy could taste so good!? These vegan carrot cake Whoopie pies are gluten-free, plant-based, simple, and easy-to-make, and delicious!

Equipment

  • 13” x 18” Baking Pan

Ingredients

Carrot Cake Cookies

  • 2 cup Rolled Oats blended
  • 1 cup Shredded Carrots
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1 tsp Ground Ginger
  • ¼ cup Refined Coconut Oil melted
  • ¼ cup Maple Syrup
  • ¼ cup Almond Milk

Vegan Cream Cheese Frosting

  • 4 oz Vegan Cream Cheese
  • ½ tsp Vanilla Extract
  • ¼ cup Powdered Sugar

Instructions

  • Preheat oven to 350°F and prep baking sheet pan with parchment paper, silicon baking mat, or oil.
  • Using a blender, blend the rolled oats to create oat flour. You may sift the oat flour.
  • Combine all the wet Carrot Cake ingredients (maple syrup, almond milk, coconut oil) in a food processor and blend until smooth.
  • Add in the dry Carrot Cake ingredients to the food processor and blend until smooth.
  • Form 12 cookies using a heaping tablespoon of batter.
  • Bake cookies for 15-18 minutes. Remove cookies from the oven once the tops are baked, yet the cookies are still soft to the touch. The cookies will firm up while cooling.
  • While baking, combine the Cream Cheese Frosting ingredients together and whip together until smooth.
  • Once cookies have fully cooled, create the Whoopie Pie by slathering Frosting on one side and pushing two cookies together! Top with powdered sugar.
  • Enjoy!
