Nothing says good morning better than some fruity and sweet cold oats! These blueberry overnight oats are the perfect thing to get you through the week or to start the weekend!

A Bit More About This Recipe

I have to wake up very early to get to work by 6:00am every morning, which can be rough, haha. As much as a savory cooked breakfast or sweet smoothie bowl sounds, I unfortunately don’t have time. For that reason, I am a huge advocate for easy grab-and-go breakfast.

This brings me to my cold oats breakfast obsession. I love making cold oats because I can easily prep it the night before and just grab it and go to work.

I ate overnight oats all throughout college and I didn’t really enjoy it because I always kept it very basic and boring. Since then, I decided to make a change and put a little more effort into making my morning oats much more enjoyable! The first recipe I came up with is this delicious Blueberry Cheesecake Oats recipe!

What Type of Oats?

I recommend using Rolled Oats if you like your oatmeal less “mushy.” If you like more “mushy” oatmeal, then I recommend Quick Oats. My personal preference is Quick Oats.

Blueberry Cheesecake Oats

Ingredients

  • 1 cup Cashews
  • cup Blueberries fresh or frozen
  • ½ cup Almond Milk
  • ¼ cup Agave Nectar
  • 1 Flaxseed Egg 1 tbsp flaxseed meal + 2.5 tbsp water
  • ½ tsp Lemon Juice
  • 1 tsp Apple Cider Vinegar
  • ½ tsp Vanilla Extract
  • 2 cup Quick or Rolled Oats

Instructions

  • Soak cashews in water for 3-4 hours or overnight to soften. If you are limited on time, then soak cashews in hot water (boiled) in a bowl covered in plastic wrap for 10 minutes.
  • Prepare flaxseed egg by combine flaxseed meal with water in a small bowl. Let this sit for 5 minutes to thicken.
  • Defrost blueberries if you are using frozen blueberries.
  • Drain and rinse cashews and add all ingredients into a food processor or blender. If you’re using defrosted blueberries, then do not include the liquid from defrosting.
  • Blend until smooth and transfer into a large mixing bowl.

  • Transfer to an airtight container and let it sit overnight in the refrigerator to thicken.
