Vegan Egg Replacers – Great Substitute for Eggs in Baking

Cooking vegan does not need to be complicated and you can easily adapt your classic recipes to be vegan with just a few adjustments. The biggest but perhaps easiest one to takle is a vegan egg replacement.

When veganizing the egg aspect of a recipe, there are a few different routes we can take:

Eggs are commonly used and important in regard to binding the other ingredients together and adding moisture to a recipe. In addition, eggs help with getting that final finish, like an egg wash.

Now that we know what we need to accomplish, we can easily find a good vegan egg replacement!

Vegan egg replacer

Flaxseed Egg

Best For

Sweet or savory recipes alike! The taste is neutral and won’t take away from any dish!. This is my go-to vegan egg replacer!

Recipe

1 Egg = 1 Tbsp Flaxseed Meal + 2.5 Tbsp Water

When flaxseed meal is combined with water, an egg like consistency forms. This is overall best vegan egg replacement because it has a consistency nearly identical to normal eggs and has a neutral taste. Therefore, this can be used for sweet or savory recipes.

Flaxseeds provide amazing nutrients (omega-3 fatty acids) and when blended down, flaxseed meal is created. Flaxseed meal can also be purchased, but, it is very easy to blend some flaxseeds to create a flaxseed meal.

Flaxseeds or Flaxseed Meal can be purchased at most grocery stores. I will typically purchase either Flaxseeds or Flaxseed Meal depending on what is on sale. If I happen to purchase Flaxseeds, then I will blend it all into Flaxseed Meal in one big batch and store it for later.


Chia Seed

Best For

Sweet and some savory dishes! Chia seeds tend to have more of a flavor than flaxseeds so only use them in savory dishes if the dish has a strong flavor.

Recipe

1 Egg = 1 Tbsp Ground Chia Seed + 2.5 Tbsp Water

Chia seeds also provide amazing nutrients (omega-3 fatty acids, fiber) and when blended down, similarly to Flaxseeds, and combined with water an egg like consistency forms. The main difference with Chia seeds in comparison to Flaxseeds is that you can easily buy Flaxseed Meal in the grocery store, but with Chia seeds you will need to blend them.

Chia Seeds can be purchased at most grocery stores. If I happen to buy Chia Seeds I will blend a big batch at once to store for later.


Apple Sauce

Best For

Sweet recipes! Apple sauce is sweet and tangy so make sure it goes with your dish’s main flavors.

Recipe

1 Egg = ¼ c Apple Sauce

If you are baking an apple flavored dish, then applesauce is the perfect egg replacer. It will add flavor to your creation and is easy to obtain from any grocery store!


Banana

Best For

Sweet recipes that use or are complemented by banana!

Recipe

1 Egg = ¼ c Mashed Banana

Similar to apple sauce, if you are baking or making a banana flavored dish, then using banana is the best egg replacer. All you have to do is mash the banana and it’s as simple as that. If you are making a baked oatmeal or muffins, then using mashed banana is perfect!

If you have the option between using applesauce or bananas, then I recommend using bananas because it has a more viscous texture that will mimic an egg better.


Puree

Best For

Savory or some sweet recipes! The use of a purée depends on the dish you are preparing. For example, my Pumpkin Monkey Bread Bites use pumpkin purée.

Recipe

1 Egg = ¼ cup Purée

Whether you are using a sweet potato purée or pumpkin purée, these thick and viscous ingredients are perfect egg replacers when you are diving into all your fall recipes. Of course you will not want to use these if the recipe does not include any of these flavors, but it’s a great option to help lessen your ingredients!


Nut Butters

Best For

Recipes that are meant to have a nutty flavor!

Recipe

1 Egg = 3 Tbsp Nut Butter

Nut Butters are very viscous and can help provide egg like qualities in baked goods. Just be careful to remember that your recipe will come out with the flavor of whatever nut butter you may use. Some great nut butters I like to use are Almond Butter, Peanut Butter, and Sunflower Seed Butter.
