Vegan Caesar Salad – A Great Classic but Dairy-Free

With BBQ season starting, I couldn’t think of a better more classic salad to pair with any dish served hot from the grill than a delicious Caesar Salad! I was never a huge fan of Caesar Salad, but I am a big-time supporter of this Vegan Caesar Salad.

This salad is deliciously creamy and completely satisfying, but it also leaves you feeling light rather than heavy, like with a classic Caesar salad. This easy recipe will be the highlight at your next food gathering.

How to Make it “Cheesy”

If you haven’t heard of Nutritional Yeast (Nooch), then you need to listen up. Nooch is a great source of B12 and we all can use more B12. It provides a “nutty” and “cheesy” flavor that is crucial. Here is my favorite Nutritional Yeast.

I hope you enjoy recreating this iconic salad and have fun adjusting it as little or as much as your heart desires. I am a huge advocate for making your own salad dressing because you know exactly what you are adding, you can easily throw it together, and you can alter it to your own taste buds.

Vegan Caesar Salad

My vegan Caesar salad is creamy, light, healthy, and delicious! It is the perfect pair for an Italian dinner or even a potluck!

Ingredients

General

  • 1 head Romaine Lettuce

Almond Caesar Dressing

  • cup Water
  • cup Almonds raw
  • 3 tbsp Lemon Juice
  • 1 tsp Rice Vinegar
  • 2 tsp Dijon Mustard
  • 1 tbsp Vegan Mayo optional
  • 1 tbsp Nutritional Yeast
  • 1 tbsp Capers
  • ¼ tsp Black Pepper
  • 1 tbsp Olive Oil optional

Vegan Parmesan

Roasted Chickpeas

  • 1 can Chickpeas
  • 1 tbsp Olive Oil
  • Garlic Salt to taste

Instructions

Almond Caesar Dressing

  • Soak almonds in water for 3-4 hours or overnight to soften. (If you are limited on time, then soak cashews in hot water (boiled) in a bowl covered in plastic wrap for 10 minutes)
  • Drain and rinse almonds and add all Almond Caesar Dressing ingredients into a food processor or blender. Blend until smooth and set aside.

Vegan Parmesan

  • Using a blender or food processor, blend all Parmesan ingredients until broken down into small crumbles. Set aside.

Roasted Chickpeas

  • Preheat oven to 350°F.
  • Drain, rinse, and dry chickpeas.
  • Prepare baking pan with a silicon baking mat or foil. Evenly disperse chickpeas on baking pan and pour oil on top and evenly coat chickpeas. Then lightly sprinkle garlic salt on top.
  • Bake in oven for 15 minutes. Remove baking pan, shake chickpeas around, and bake for another 15 minutes or until crispy.

Assembly

  • Wash, dry, and tear head of romaine lettuce.
  • In a large bowl, combine lettuce, almond caesar dressing, parmesan as desired, and roasted chickpeas as desired and mix thoroughly.
  • You may save some parmesan and roasted chickpeas to top before serving. Ground fresh black pepper on top as desired.
