Snickerdoodle Chia Seed Pudding – A Great Quick and Easy Dessert!

Growing up as a kid I didn’t fully appreciate how delicious baked goods could be, as I was a huge ice cream fanatic. I always preferred my treats cold and refreshing, which makes sense since I grew up in Hawaii. One of my favorite dishes I have come to love was Chia Seed Pudding!

It wasn’t until I left Hawaii to go to college in Colorado did I find an appreciation for warm brownies, soft cookies, or fluffy muffins.

The moment that completely turned my life around was my very first cookie from a shop called Mary’s Mountain Cookies in the small town near campus. They served huge cookies larger than my hand and they always ran a buy one get one free special that, as a broke college student, I couldn’t resist.

My favorite cookie to buy was in fact the classic Snickerdoodle. Disclaimer, they sadly do not make vegan cookies, but their Snickerdoodle cookies were my weakness. This is what inspired my Snickerdoodle Chia Seed Pudding!

This delicious parfait is a perfect mash up of my childhood love for cold desserts and my college love for Snickerdoodle cookies. The best part is that this dessert is much healthier, easy to make, and can be enjoyed guilt free for breakfast!

Almond Milk

You’re welcome to use any store-bought, plant-based milk (cashew, coconut, hemp, soy, etc.), but if you want to truly elevate your pudding you can make your own milk using my Almond Milk recipe.

Chia Seeds

Chia Seeds are great for getting in your healthy omega-3 fatty acids. They are rich in antioxidants in providing fiber, iron, and calcium. They are great at absorbing liquids to form a jelly like texture around the seed. You can buy these from most grocery stores in bulk or prepackaged. Typically located near flours and grains. I like to buy these from TJ Maxx on sale.

Maca Powder

Maca provides amazing health benefits and a good caramel earthy taste. You can find this at most health food stores.

Dates

Medjool dates are great to use as a natural sweetener and have a delicious caramel taste.

Agave Nectar

This is a great liquid sweetener to use in replacement of processed sugar. There are many other types of sweeteners you can use instead such as Maple Syrup or Stevia. I prefer using Agave because it has a very neutral taste.

Ingredients

Snickerdoodle Chia Seed Pudding

Coconut Whip Cream

  • 1 can Full-Fat Coconut Milk
  • 1 tsp Vanilla Extract
  • 1 tbsp Agave Nectar

Instructions

Snickerdoodle Chia Seed Pudding

  • If using dates, then soak dates overnight or for 10 minutes in hot water and covered. Blend dates with almond milk, vanilla extract, cinnamon, and maca powder. Then transfer into a bowl (I like to use a 32 ounce mason jar).
  • If not using dates, then you may mix the almond milk, cinnamon, and maca powder in a bowl or mason jar.
  • Add chia seeds to mixture and stir.
  • Cover bowl with a lid or wrap (plastic, silicon, beeswax, etc.) and place in the refrigerator.
  • Stir mixture every 30 minutes for 1 hour to break up the chia seeds.

Coconut Whip Cream

  • Refrigerate coconut milk overnight or for 4 hours to allow coconut cream to separate from water.
  • Place a ceramic, glass, or metal bowl in the freezer for 15 minutes before whipping the cream.
  • Open the can of coconut milk and only remove the solid white cream from the can and place into the bowl that was chilling in the freezer (you can save the liquid part and use it in your coffee, smoothies, cereal, or oatmeal).
  • Using an electric mixer (you may do this by hand, but it will take longer) whip the coconut milk solids for 5-10 minutes. Mix until peaks are able to form and hold its shape.
  • Add vanilla extract and agave. Mix until fully incorporated.

Assembly

  • Alternate scoops of snickerdoodle chia pudding and coconut whipped cream to build your parfait.
  • Add graham cracker, cookie crumbs, or cinnamon to top.
