If quarantining in 2020 has taught us anything, it has taught us how amazing a Quick, Easy Banana Bread recipe can be! I know I had to figure out a way to make use of my slightly overripe bananas and I’m sure you do too!

Easy Banana Bread for Everyone

My Banana Bread recipe is Oil-Free, Added Sugar Free, Plant-Based, Vegan, Gluten-Free Friendly, Keto Friendly, Paleo Friendly, and any other possible type of diet because it’s so adaptable. You can customize it to whatever you have laying around your pantry, it’s that easy!

Minimal Ingredients Yet Still Delicious!

I wanted to create an easy banana bread recipe that was hassle free and would actually incorporate whatever you may have in your pantry. I provide great substitution to help you customize your banana bread to your liking or what you already have at home.

Vegan Egg Replacer

I recommend using a Flaxseed Egg, which is a combination of Flaxseed Meal and Water. But, there are other great alternatives that you can use instead. Here are other great Vegan Egg Replacement ideas that you may use as well.

Maple Syrup

There are a variety of different sweeteners that you can use instead of maple syrup such as agave, stevia, brown rice syrup, or honey. You will need to add more liquid if you use brown rice syrup or honey.

Easy Vegan Banana Bread

Equipment

  • Muffin Pan (makes 12 muffins)
  • Bread Loaf Pan (makes 1 loaf)

Ingredients

  • 2 cup Flour
  • 1 tbsp Baking Powder
  • 1 tbsp Ground Cinnamon
  • 1 cup Banana smashed (about 3 bananas)
  • ¼ cup Maple Syrup
  • 1 Flaxseed Egg
  • cup Chocolate chips or Nuts optional

Instructions

  • Preheat your oven to 350°F, then prepare Muffin Pan or Loaf Pan with oil, butter, or cupcake liners / parchment paper.
  • In a small bowl, mix Flaxseed Meal with Water. Let this sit for 5 minutes to thicken and create the flaxseed egg.
  • In a medium mixing bowl, smash Bananas. Then add wet ingredients and Flaxseed Egg. Mix ingredients thoroughly.
  • In a large mixing bowl, combine all dry ingredients.
  • Pour wet ingredients into dry ingredients and slowly mix by folding (don’t over mix the batter).
  • Once batter is mixed, gently fold in Chocolate Chips or Nuts.
  • Pour batter into Loaf or Muffin pan. Bake Loaf for 45-55 minutes. Bake Muffins for 20-30 minutes.
  • Allow Loaf or Muffins to cool in the pan for 10 minutes before transferring to a cooling rack. If you are planning to freeze, then freeze loaf or muffins while still warm to lock in the moisture.
