Chickpea Cookie Dough – A Great Everyday Dessert to Enjoy

If you are someone that loves a good sweet indulgence on a regular basis, then this Chickpea Cookie Dough is exactly what you need! This cookie dough is healthy, oil-free, added sugar free, vegan, and gluten-free… so it’s great for everyone to enjoy!

No Added Sugar!

This chickpea cookie dough is refined sugar free and makes for the perfect night time dessert before bed. I always reach for this when I just want a little something sweet! All you have to do is throw everything into a blender and you got yourself your own healthy cookie dough!

Very Versatile

I love to add just a bit more liquid and turn this cookie dough into a cookie dough DIP! It’s best to dip graham crackers, animal crackers, and my all time favorite, Biscoff Biscuits

TIPS AND TRICKS

  • You may need to scrape down the sides in the beginning to help get the chickpeas blended thoroughly
  • You can adjust the consistency by adding more liquid and if you want you can turn it into a fun dip 

THE MORE YOU KNOW

Maple Syrup

There are a variety of different sweeteners that you can use instead of maple syrup such as agave, stevia, brown rice syrup, or honey. You will need to add more liquid if you use brown rice syrup or honey.

Flaxseed Meal

Flaxseed Meal is just blended or ground flaxseeds, so if you buy flaxseeds then you will just need to blend them. Otherwise, you can buy flaxseed meal in any grocery store. Typically it is located in the health food section or in the baking aisle.

Vegan Chocolate Chips

There are countless vegan chocolate chip selections now, but my favorite brands are Enjoy Life or Lily’s.

Equipment

  • Blender or Food Processor

Ingredients

  • 1 can Chickpeas 15oz
  • 1 tsp Vanilla Extract
  • ¼ cup Maple Syrup add ¼ cup sugar for more sweetness
  • 2 tbsp Flaxseed Meal
  • 2 tbsp Almond Butter add more for thinner consistency
  • cup Chocolate Chips optional

Instructions

  • First, rinse and drain chickpeas. Make sure chickpeas are fairly dry.
  • Add the chickpeas to the blender and blend for 20-30 sec. Scrape down the sides and blend again until chickpeas are fully blended.
  • Add the remaining ingredients, then blend until smooth. You may add more liquid to reach a thinner consistency. Finally, mix in chocolate chips.
  • Enjoy!
