Lunch is always such a great break in the middle of the day. It allows me to reflect on the morning and look forward to the afternoon. When I first adopted the plant-based lifestyle, finding vegan lunch recipes that weren’t bland was difficult. Luckily, I have created vegan lunch recipes that are very flavorful and easy to make!
