Soba Noodle Salad – Better Than Your Average Salad

In any meal, one of my goals is to eat the rainbow. I always try to incorporate a multitude of different vegetables. This Soba Noodle Salad does that and so much more! It is completely vegan, plant-based, and made with whole foods and ingredients.

What is Soba Noodle Salad?

This Soba Noodle Salad is my Asian twist on a pasta salad! I find it to be more filling than a traditional salad, mainly due to the addition of carbohydrates. I love this dish whenever I need a lot of energy but still want to feel like I’m eating something healthy!

Meal Prep

This is the perfect meal that can be made for meal prep. Whether you keep the ingredients ready to assemble each day or mix it all up into one big batch, you can’t go wrong.

The dressing is the key ingredient that pulls this all together. If you are craving more of a salad, then you can top this on a nice bed of spring mix and you got an amazing salad!

TIPS & TRICKS

  • Rinse the soba noodles in cold water after cooking in order to keep them at the right texture!
  • You can usually find shelled edamame in the frozen section of your grocery store.
  • Using the freshest veggies will lead to the best flavor, even if it does take more work

Soba Noodles

There are different types of soba noodles. I recommend using Buckwheat noodles (they are brown). These can be found in the Asian international section of any grocery store.

Ingredients

  • ½ package Soba Noodles
  • cup Miso Ginger Dressing
  • cup Carrots shredded
  • cup Purple Cabbage shredded
  • cup Cucumber half moon slices
  • cup Red Bell Pepper diced
  • cup Cherry Tomatoes quartered
  • cup Green Onion sliced
  • cup Edamame shelled
  • cup avocado for topping

Instructions

  • Make the Miso Ginger Dressing.
  • Wash all vegetables. Cut and shred Carrots and Purple Cabbage. Slice Cucumbers and Red Bell Peppers. Chop Cherry Tomatoes and Green Onions.
  • Prepare Edamame according to packaging instructions.
  • Prepare Soba Noodles according to packing instructions. I recommend boiling for 4 minutes, then drain/rinse noodles in cold water.
  • In a large bowl, combine Soba Noodles, vegetables, and 1/3 c of Miso Ginger Dressing. Mix thoroughly and top with freshly sliced or cubed avocado (prevents avocado from getting smooshed).
