In college and now with working 40 hours a week, I have little time each night to make complicated dishes. It can also be quite difficult to make dinner every night of the week. These vegan dinner recipes are meant to be easy to make and enough to last until the next day for either lunch or dinner again.
I usually meal prep for the week, so a lot of the dinner recipes are rather large in portion so that I cook on Sunday and the dinners last until Friday.
While eating out in restaurants is nice and usually delicious, making a home cooked meal can be equally delicious. These vegan dinner recipes pack a lot of flavor, so don’t think they won’t be as delicious as takeout!
