A bit about this recipe

With summer coming to an end and my traveling starting to slow down, I start to crave having routine, healthy home cooked meals, and structure back into my life. I am always looking for quick, easy, healthy, and delicious meal ideas that are great for those days or weeks that you just need to reset.

Food is power and being able to nourish your body after one too many treats here and there is vital. We are all not perfect and can’t eat 100% healthy all the time, but that is perfectly fine and necessary for our own mental health.

When in need of a good reset, I love to throw some cooked veggies together on top of a hotbed of brown rice. This easy vegan stir fry is a quick recipe that incorporates the perfect veggies to get you reset and back on track for the week!
