Vegan Chicken Long Rice – A Great Hawaiian Classic without the Meat
A classic dish and often served only on special occasions, Hawaiian Chicken Long Rice is actually a very minimal ingredient dish yet packed with flavor.
“Veganizing” this dish holds a special place in my heart because I grew up eating my Dad’s Chicken Long Rice. He would always make a huge pot just for dinner because his motto, along with most people from Hawaii, “If it can’t feed an army, then there isn’t enough.”
This Hawaiian Chicken Long Rice is a tribute to my home (Hawaii), my family, and culture. I wanted to remake this recipe with justice and not lose any of the delicious essence of the dish.
With the perfect modification of Enoki Mushrooms for chicken and addition of Bok Choy, I am happy to report that I have officially “veganized” this dish. Even better, it’s super easy, healthy, and delicious. This is perfect to make for dinner, a potluck, or meal prep. All you need is one pot and an open mind to try this delicious Hawaiian dish!

TIPS & TRICKS
- Bean Thread Noodles: Soak the bean thread noodles in water for 30 to 60 minutes to allow the noodles to rehydrate. This helps to prevent the noodles from soaking up all the soup.
- Cook the cilantro stems in the soup and save the cilantro leaves for topping. The stems have more flavor.

Bok Choy
Bok Choy is a delicious green that can be found at pretty much every grocery store. It is used in a bunch of Asian dishes and has a delicious flavor!
Enoki Mushrooms
Enoki mushrooms are long thin mushrooms. They are perfect for this dish since it somewhat resembles the shredded chicken usually used in the traditional dish.
Bean Thread Noodles
These are pretty much impossible to find at most big-chain grocery stores. Explore your neighborhood Asian grocery store to find these! Plus, Asian grocery stores are so much fun to explore!
Vegan Chicken Broth
Normal vegetable broth just doesn’t quite work for this recipe. Luckily, Better Than Bouillon makes a Vegan Chicken Broth! This stuff tastes delicious and I can’t believe it’s vegan. It normally isn’t at grocery stores so order it on Amazon or from Better Than Bouillon directly!

Vegan Chicken Long Rice
Ingredients
- 1 bunch Baby Bok Choy
- 3 oz Enoki Mushrooms
- ½ Medium White Onion
- ¼ cup Cilantro
- 1 inch Fresh Ginger
- 8 oz Bean Thread Noodles
- 4 cup Vegan Chicken Broth see The More You Know section
- Salt to Taste
Instructions
- Soak the bean thread noodles in a bowl of room temperature water for 30-60 minutes.
- Chop the Bok Choy and onion into cubes.
- Shred the Enoki Mushroom.
- Separate the Cilantro leaves from the stems and chop the stems 1-inch in length.
- Slice the Ginger.
- In a large pot over high heat, bring the Vegan Chicken Broth and Onion to a boil.Once boiling, turn down the heat to medium for the soup to simmer.
- Add the Bok Choy, Ginger, Enoki Mushrooms, Cilantro stems, and Bean Thread Noodles into the broth and continue to cook.
- Cook until the noodles are softened.
- Add salt and cilantro leaves to finish.
