Lemon Pepper Cashew Sauce – Great for Dipping and Salads

If you find that you find “healthy” foods to be boring or bland, then you need to step up your sauce or dressing game! With that in mind, I created this awesome creamy cashew sauce!

Vegetables can taste amazing if flavored properly, I promise. I am a huge advocate for versatile sauces that can be used in a multitude of different recipes, so give this recipe a shot!

CREAMY CASHEW SAUCE, DIP, & DRESSING VARIATIONS

I created this deliciously simple and easy creamy cashew sauce to be used for a variety of different uses and recipes. My favorite way to use this sauce is as a dressing for my salad. I also Like use it as a sauce for my “Buddha Bowls” or a dip for my vegetables, especially grilled veggies.

All I do is vary the amount of water that I use. If I want a dip, then I use less water. For a sauce, then I use the water written in the recipe. If I want a dressing, then I use more water. Doesn’t get any simpler than varying the amount of water.

TIPS & TRICKS

  • If you don’t have a high speed blender like a Vitamix, Blendtec, or Ninja, do not fret. You can soak your cashews overnight in water or if you are pressed for time you can soak your cashews in hot water and covered for 10 minutes.
  • The sauce is a bit on the thicker side, so if you want a more thin consistency for dressing just slowly add 1 tsp of water at a time until you reach your desired consistency.

Hemp Hearts are a great source of omega-3s that help promote heart health and other great nutritional value that we could all use. Luckily, hemp hearts have become a more well known item. You should be able to find at most grocery stores in either their natural product section or baking section.

Nutritional Yeast (Nooch)

Nutritional Yeast provides a nutty flavor that many associate with a cheesy flavor profile. It’s a great source of B12 and can be found in most grocery stores in the condiments section.

Ingredients

  • ½ cup Raw Cashews
  • 2 tbsp Hemp Hearts
  • ½ Lemon juiced
  • 1 tbsp Nutritional Yeast
  • ¼ tsp Garlic Powder
  • ½-1 tsp Black Pepper to desired spice level
  • ¼ tsp Salt
  • ½ cup Water add 1-3 tsp for desired consistency

Instructions

  • If you do not have a high speed blender, then soak your cashews overnight or in hot water covered for 10 minutes. If you have a high speed blender, then you do not need to soak your cashews.
  • Drain and rinse your cashews, then add all ingredients into the blender and blend until smooth.
  • Add more water by 1 tsp at a time until you reach your desired consistency depending on whether you will be using this as a dip, sauce, or dressing. Add more black pepper as needed to satisfy your spice preference and ENJOY!
