Asian Slaw
This Asian Slaw is easy to make, healthy, and super delicious! It pairs perfectly with the Carrot Miso Ginger dressing I created!

Ingredients
Slaw Base
- 1 cup Carrots sliced
- ½ cup Cabbage sliced
- ½ cup Purple Cabbage sliced
- ½ cup Red Bell Pepper sliced
- ¼ cup Cilantro chopped
- ¼ cup Green Onion sliced
Carrot Miso Ginger Dressing
- 1½ Medium Carrots
- 1 inch Ginger Root
- 2 tbsp Rice Vinegar
- 3 tbsp White Miso Paste
- 1 tbsp Water
- 1 tsp Sesame Oil
- 1 tbsp Agave Nectar
Instructions
Slaw Base
- Chop and slice up the carrot, cabbage, bell pepper, and purple cabbage into 1 inch long pieces.
- Chop up the cilantro and green onion.
- Make the Carrot Miso Ginger Dressing (see below)
- Combine the dressing and veggies in a mixing bowl.
- Top with green onion and cilantro for garnishing if desired.
Carrot Miso Ginger Dressing
- Finely mince the carrot and ginger (may want to use a food processor).
- Add all the dressing ingredients together in a small bowl and combine thoroughly. A food processor or blender works well. Add more water to get to desired consistency.
