Savory Jook Oats

I was skeptical at first on the idea of savory oats, but this recipe has turned into one of my go-to breakfast recipes! It’s salty and satisfies all my savory breakfast cravings. It was inspired by one of my favorite Chinese meals. It’s vegan and gluten-free. Enjoy!

Ingredients

  • ½ cup Oats rolled or quick oats
  • 1 ¼ cup Vegan Chicken Broth
  • 1 ¼ cup Vegetable Broth if not using Vegan Chicken Broth
  • ½ tsp Trader Joe's Vegan Chicken Seasoning if not using Vegan Chicken Broth
  • ½ - 1 inch Ginger sliced
  • ½ - 1 clove Garlic sliced
  • 1 -2 tbsp Cilantro
  • ½ - 1 tbsp Coco Aminos may use soy sauce or liquid aminos
  • ¼ cup Spinach optional to mix in after
  • 1 -2 tbsp Green Onion chopped

Instructions

  • Prepare Garlic, Ginger, and Cilantro as directed.
  • In a small pot over high heat, bring Broth, sliced Ginger, sliced Garlic, and Cilantro to a boil.
  • Once boiling, lower to medium-low heat to simmer, then add in Oats. Stir until Oats begin to thicken.
  • Remove pot from heat, transfer to a bowl and add in some Coco Aminos, optional Spinach, and Green Onion. ENJOY!
