Easy Vegan Sandwich – A Great Way to Eat your Veggies

If you had to pick the most iconic lunch, I could almost guarantee you that it would be a sandwich. Well for me, my most iconic sandwich is this Easy Vegan Sandwich!

Why do we love sandwiches?

Whether it’s hot, cold, fancy, or simple, for some reason we love sandwiches. I would guess it’s the simplicity of not needing utensils and the full range of possibilities that you can put between two slices of bread.

A bit of background for this recipe

Growing up, I never liked sandwiches. In fact, I thought it was the worst meal you could possibly feed me. I was never really into bread because I loved rice, so much so that I ate it in every meal… breakfast, lunch, dinner… you name it!

It wasn’t until my mom made me what we called “The Ultimate Veggie Sandwich” that I slowly developed an appreciation for what I thought was the most overrated meal.

What makes this sandwich so special are a few special ingredients! No matter what random veggies I have left over in my fridge or what happens to be on sale in the store, there are 4 important ingredients that make this sandwich “The Ultimate Veggie Sandwich”.

The four needed ingredients are Spike Seasoning, Vegenaise Mayo, Avocado, and Alfalfa Sprouts. It also definitely helps having a good bread to seal the deal. I love the Food For Life or Dave’s Killer Bread.

Without further ado, here’s a very basic styling of how I typically love to enjoy this sandwich. It’s incredibly easy to put together, meal prep for your week, and exponentially affordable!

TIPS & TRICKS

  • Adding a bit of Sriracha gives the sandwich a nice kick if you like some heat!
  • I love using my Spike Seasoning for this sandwich. It pairs perfectly with some Vegan Mayo.

Easy Vegan Sandwich

This quick, healthy, and easy vegan sandwich is sure to make everyone happy for lunch. Great recipe for taking to work or school, plus it's vegan!

Ingredients

  • 2 Avocados
  • 1 Cucumber
  • 1 Carrot
  • 1 Tomato
  • 4 leaves Romaine Lettuce
  • Alfalfa Sprouts
  • Vegenaise Mayo
  • Spike Seasoning
  • Sliced Bread

Instructions

  • Wash and dry vegetables.
  • Thinly slice carrot and cucumber. A vegetable peeler is helpful.
  • Slice tomato into circular slices.
  • Slice avocado into thin slices to lay flat on bread (1/2 avocado per sandwich).
  • Separate leaves of romaine lettuce.
  • Assemble sandwich. Lay out two slices of bread and evenly spread a thin layer of Vegenaise Mayo on one or both slices of bread.
  • Lay avocado slices on one slice of bread and sprinkle Spike Seasoning on both slices of bread.
  • Add Carrot slices, Cucumber slices, 1-2 Tomato slice(s), 1 Romaine Lettuce leaf, and ½ a handful of Alfalfa Sprouts on top of the Avocado slice side.
  • Place the other slice of bread on top of your veggie mound.
  • Enjoy this wonderful sandwich!
