Roasted Veggie Sandwich – Much Better Than Your Average Sandwich

The Perfect Winter Sandwich

When I think of a sandwich, I think of cold ingredients between 2 slices of bread being enjoyed outside in the warm weather. Unfortunately, warm weather is scarce when it is winter and thus sandwiches are trumped by warm soups, stews, or chili. I, however, refuse to let go of sandwiches during the winter! That’s why I decided to create this Roasted Veggie Sandwich!

Sandwiches are perfect for a quick lunch, especially when on the go. That’s why this sandwich is super easy and uses the vegetables that are in season! It is deliciously easy, quick, perfect for meal prep, plant-based, and vegan.

Paying Tribute

I wish I could take full credit for coming up with the idea; however, I decided to recreate one of my favorite sandwiches back in Hawaii. Whenever I go back to Hawaii, I always make it a point to go out to the North Shore for a day. There lies my favorite sandwich shop called Waialua Bakery. They serve up the best sandwiches made with fresh produce and freshly made bread. Therefore, in tribute, I have officially recreated this amazing sandwich! Roasted Veggies

If you aren’t the biggest fan of vegetables, then roasting veggies is perfect for you! I created this recipe to be able to do one big batch bake to keep it nice and simple. If you are meal prepping, then it’s very easy to roast all your vegetables in one batch. Later, you can reheat the vegetables and construct your sandwich each day with the other sandwich components.

It’s All About the Spread

A sandwich is incomplete without the perfect spread. Having the perfect spread helps to bring all the sandwich components together between 2 perfectly sliced breads. I lightly season the roasted veggies to allow for the spreads to carry the flavor.

My go to combo is Hummus and Pesto. I developed the perfect Classic Hummus recipe and Avocado Pesto recipe that are completely oil-free. They both contain very simple and minimal ingredients and pair perfectly with this Roasted Veggie Sandwich. With these delicious spreads and a few fresh vegetable toppings, your sandwich is ready to eat!

TIPS & TRICKS

  • Use a silicone baking mat or Air-fryer to roast your vegetables without using any oil.
  • Don’t be afraid to splurge a little on your bread selection. It will make a big difference.
  • Add or take out any vegetables and make this sandwich your own. Vegetables that are in season are great!

Roasted Veggie Sandwich

This roasted veggie sandwich is perfect for winter, fall, spring, or summer! It is easy to make, simple, healthy, and uses any veggies that are in season.

Equipment

  • 13”x18” Baking Sheet

Ingredients

Roasted Veggies

  • 1 Red Bell Pepper sliced
  • 1 Zucchini sliced
  • ½ Onion sliced
  • 1 Eggplant sliced
  • 2 tsp Olive Oil
  • 1 tsp Garlic Powder
  • Salt and Pepper to taste

Everything Else

  • 1 Head of Lettuce pick your favorite
  • 3 Tomatoes sliced
  • Alfalfa Sprouts
  • Classic Hummus
  • Vegan Pesto
  • Mustard optional

Instructions

  • Preheat oven to 425°F and prepare baking pan with silicone baking mat, aluminum foil, or oil to prevent vegetables from sticking to the pan.
  • Prep, wash, and slice vegetables.
  • In a large bowl combine Bell Pepper, Zucchini, Onion, Eggplant. Coat with Olive Oil. Mix in Garlic Powder, Salt, and Black Pepper.
  • Spread vegetables evenly on a baking pan and bake for 30-35 minutes until vegetables are browned and tender.
  • Start assembling the sandwich with two slices of bread, spread hummus on one slice and pesto on the other. Start to layer the sandwich with Lettuce, Tomato, Roasted Vegetables, then Sprouts. Enjoy!
